API question: How to get actual customers email in webhook response

Hi, I have setup a webhook with the aim of updating our systems when certain events happen. However, the customers email always comes back as <SOME ID>@os.com, instead of their actual email which is saved agaist the project. Is there a way to force it to return the actual email? Thanks
